Deliciously chewy and packed with wholesome ingredients, these homemade Blueberry Bars are perfect for breakfast, snacks, or dessert. Made with fresh blueberries, oats, seeds, coconut, and a touch of maple syrup, these bars are baked to golden perfection and bursting with natural flavour. Easy to make and customizable to your preferred size, they’re a crowd-pleasing treat everyone will love.

Makes: 10-12 Bars*

Ingredients:

  • 1 cup salted butter 
  • ½ cup maple syrup 
  • ¾ cup golden yellow sugar
  • 1 ½ cups rolled oats 
  • 1 cup unsweetened shredded coconut 
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • 1 cup granola 
  • 1 ½ cup fresh Silver Valley Farms blueberries 
  • 1 lemon, zested

 

Directions:

  1. Preheat oven to 320 degrees Fahrenheit.  
  2. In a large pot, combine the butter, syrup and sugar together and cook until everything is melted and mixed together.  
  3. Turn off the heat and place all remaining ingredients together and mix until fully combined.  
  4. Place ingredients in a 6-8” square baking tray lined with parchment paper.  Make sure ingredients are as level as possible by using a spatula. 
  5. Place the baking tray in the oven and bake for 40-50 minutes, until bars are a nice caramel to golden brown in colour.  
  6. When the timer is complete, remove from the oven and carefully make lines (scoring) on the top of the baked ingredients to the size you want for the bars.  
  7. Allow scored bars to cool to room temperature in the tray, while being waited down with parchment on top of the bars and a heavy object on top of the parchment. 
  8. Once completely cooled, carefully remove from the tray & follow the lines you made and finish cutting into individual bars.
