Yields enough for 4-6 noodle bowls.

Toppings & Ingredients:

  • 1/4 cup shredded carrots
  • 1 thinly cut green onion
  • 1 small shaved cucumber 
  • 1/4 of a cut avocado
  • 175 gram fresh yakisoba noodles or ramen noodles
  • 1 teaspoon furikake
  • 1 teaspoon toasted sesame seeds 
  • 100 gram crispy extra firm tofu
  • 1/3 cup blueberry miso dressing 

Blueberry Miso Dressing:

  • 1 1/4 cup frozen blueberries 
  • 2 tablespoons shiro miso
  • 2.5 tablespoons rice vinegar
  • 2 tablespoons tamari
  • 4 tablespoons mirin
  • 2 tablespoons sesame oil
  • 1/4 cup grapeseed oil
  • 1/3 cup cold water
  • 1/4 teaspoon xanthan 

*Place all ingredients into a blender and puree until smooth and completely incorporated and emulsified. Strain sauce with a fine sieve. Place in fridge until ready to use.  

Crispy Tofu:

  • 350 grams extra firm tofu 
  • 1/2 cup rice flour
  • Pinch of salt
  • 1/4 cup Grapeseed oil 

*Cut the tofu into small square pieces. Toss in a bowl with the rice flour until fully coated. Place oil into a non stick pan on medium to 3/4 heat. Add the tofu and crisp up on all sides. Remove from pan and season with salt and set aside on paper towel until ready to use.

 

Directions:

*Place a pot of water on the stove top and bring to a boil. Add the noodles and cook following package directions. Strain and add to a bowl of cold water for 5 minutes. Strain again and set aside until ready to serve. In a mixing bowl toss the noodles, dressing, cucumber, avocado, carrots, green onion, and sesame seeds together. Plate into your preferred serving dish. Garnish with the crispy tofu, furikake, and a tablespoon of dressing.*
